Yes. Edits in Sheets write back to your database and vice-versa. You choose a conflict rule per table (database-wins, sheet-wins, or newest-wins) so nothing gets silently clobbered.
Connection details are encrypted at rest. You can scope a read-only role for one-way tables, and restrict the synced columns. We never store your row data longer than a sync needs.
